Microwave Snacks in Minutes: 3 BOLD Recipes! Gemma's Bigger Bolder Baking Ep 174
Hi Bold Bakers!
In a previous episode of Bigger Bolder Baking,I showed you how you can make delicious potato
chips in a microwave.
Now that video was a huge success.
So I thought to myself you guys must wantto see even more snacks made in the microwave.
So I've got a great lineup for you today,so lets get microwaving!
So as you can imagine I eat my fair shareof desserts.
So that's why when it comes to snacking, theyhave to be a little on the healthier side
to kind of balance everything out, you know.
So I'm gonna show you three healthy snackstoday.
Now the first one has been popular for thelast few years.
It is really tasty, crispy, this one is alittle bit salty, it is a kale chip.
OK, so to make our kale chips we need curlykale.
This stuff is a superfood.
It has zero fat, it is low in calories andit’s high in fiber.
It's absolutely delicious.
So all you want to do with your curly kaleis pat him dry with a paper towel.
Just to get rid of any wetness.
Lovely.
And then, all you want to do is just startripping him off the stalk in big chunks, that's
totally fine, because they'll shrivel downinto little chips.
And then just take every bit off the stalk.
Per person, you'll probably eat around threestalks of kale each.
I really like this recipe when you only havea little bit of kale hanging around and you
might not think it’s enough for a salad.
So, just over it in some oil, salt, pop itinto the microwave and you've got a nice little
snack for yourself.
So go ahead and discard the stalks.
Next what we’re going to do is just pourover a little bit of olive oil, give it a
nice little coating, and then a sprinkle ofsome salt, to give your chips nice flavor.
Then just go in with your hands and make surethat all the chips are coated in oil and salt.
When you see these done you are not gonnabelieve how fast they were to make.
And you don't need to pop them into an oven,wait for an hour, they're instant chips.
One great thing about these snacks is youcan adjust the flavor suiting your profile,
so if you want to add some onion powder inhere that would work really well, maybe a
little bit of chipotle, give it a little bitof heat, that's totally up to you.
OK, he's nice and mixed up.
Now here I have a plate lined with parchmentpaper.
And then I'm just going to go ahead and laymy kale all over it in a nice thin layer.
OK lovely, in no time at all we’re gonnabe eating homemade kale chips.
These guys are ready for the microwave.
So you're not gonna believe this but they'reonly going to take roughly three minutes to
cook.
The timing is based on my microwave, whichis 1200 watts, so check the wattage of your
microwave because your timing may vary, butat the end you just want them to be really
nice and crispy and not soft and soggy.
[Ding!]
The microwave just went off so lets checkon our chips.
Ah, these look gorgeous!
As you can see, they shriveled up quite alot.
They get nice and small.
You also hear a lot of popping when they'rein the microwave and that's all the water
getting out of there.
That's why they shrivel up so small.
These look fantastic!
OK, now this is the moment of truth.
[Crunch!]
Did you hear that?
Crispy kale chips.
Mmm, yummy, yummy, yummy, yummy.
These taste so good.
That little bit of salt on there, and theoil.
They make for a really great snack.
Put them into your lunchbox; bring them towork with you, whatever you want.
Eat them when you're watching TV, like I do.
They're so, so good.
They are best eaten the day that you madethem, within the first 24 hours.
But make sure you keep them in an airtightcontainer so you keep them as fresh as you
possibly can.
Mmm, you guys are gonna love these.
So now we've made kale chips, now the nextthing we’re gonna move onto is something
that I love to take on a plane with me.
So this is something you probably didn't knowabout me, but I'm a bit of a nervous flyer.
So when I fly, I like to make sure that Ihave a lot of stuff to watch on my iPad, I
have a lot of drinks, and I also have a lotof snacks.
One of my favorite snacks is spiced nuts.
They are really delicious and super easy.
So go ahead and choose any kind of nuts thatyou like.
I'm going to use almonds, cashews, and peanuts,but you can also use walnuts, hazelnuts, any
kinda nuts that you like.
OK so now here is the beauty of this recipe:you actually don't need to use toasted.
They can be raw because we’re actually goingto toast them in the microwave and they come
out really good.
So I'm gonna pop them in just like this asis for two minutes.
[Ding!]
So through the magic of my microwave I canactually smell the nuts have toasted.
It's actually nice and toasty on one side.
They smell delicious, all a lovely color,it’s kinda hard to believe that you can
toast nuts in the microwave.
Now this is only one step because next we’regonna cover it in a nice little spicy coating.
So into your nuts pour in some honey, sriracha,cayenne pepper, salt, and pepper, and then
mix them all together.
Now in case you think that these might bea little bit too spicy, don't worry, they're
mildly spicy, and they're also because ofthe honey you get that spicy sweet and it’s
really nice.
Also, feel free to leave out the cayenne pepperif you don't want it in there.
OK, lovely.
These guys are ready for the microwave, we’regonna pop them in for three minutes.
So while your nuts are in the microwave, every30 seconds go in and give it a nice big stir,
to make sure that all the nuts are gettingcoated they're also not burning.
Our nuts are done!
[Ding!]
As you can see they're a gorgeous golden brown.
Now if you notice while they're microwavingthat they start to smoke, don't let them microwave
any more.
They are done.
That's why you want to give them a nice mixaround to make sure that they're not burning.
But these look perfect.
So now what you do is simply just lay themout onto a flat tray lined with parchment
and let them cool down.
So listen to this: [Crackling] Do you hearhow crunchy they are?
They came out lovely and toasty from the microwave,just like I told you they would.
And now that they've cooled down, [Crunching]Mmm, yummy, yummy, yummy.
These are SO toasty.
These nuts are lovely, they're like I saidthey're not too spicy, they're a little bit
sweet.
These are perfect for in your handbag, traveling,I'm gonna take them on a flight with me for
sure.
You guys are gonna love this recipe.
OK, let’s move on to our next snack.
So now one of my guilty pleasure is potatochips, but because I already showed you how
you can make that in the microwave, now Iam gonna show you how you can make sweet potato
chips in the microwave, and they are reallyeasy.
All you need is a large sweet potato thathas been peeled, now you're just gonna take
a sharp knife and cut as thin as you can.
You want to get really thin slices becausethe thinner they are, the crispier your chip
will be.

So keep going, as thin as you can, you almostwant them to be see-through.
That's how thin they are.
Here's a good example.
As thin as you can.
That is perfect.
Now here's my chips, now I'm just gonna putthem into a little bowl, pour over some olive
oil, you don't need too much.
And then, of course, for a little bit of flavor,I'm gonna sprinkle over some salt.
Lovely.
Just give a nice mix-around.
Make sure everything is nice and coated.
Sweet potatoes are a great food.
They're full of beta-carotene, the same stuffthat's in carrots.
They're really good for you, and great tosnack on.
OK, lovely, everything's coated.
Now just like kale chips, I’ve got a platehere lined with parchment paper and I'm just
gonna lay thin layer of potato chips all theway around.
OK, these are looking great, they're not overlapping,they've got their own little space.
Now we’re gonna pop them into the microwave.
So just a little note about these sweet potatochips, I actually had to turn down the power
in my microwave to halfway because I foundthat they were burning a little bit so I turned
down the power I kept on cooking and thenthey crisped up perfectly.
So just keep an eye on them when they're inyour microwave.
When your chips are halfway done, go in andflip them over on the plate, and this will
help them crisp up really well.
And remember, everybody's microwave is different,so you might need less time, or you might
need more time.
[Ding!]
And my sweet potatoes are done!
Now, I did microwave them for roughly aroundtwo minutes more because I found they were
a little bit soft.
Now if you've ever noticed with sweet potatochips, they can tend to be a little bit chewier
than regular chips so just keep that in mindwhen you make yours.
But as always, I've got to prove to you thatthese worked so, [Crunch] Hear that?
Crispy chips straight from the microwave.
Oh, my gosh.
These are so tasty, the little bit of salt;you only need a tiny bit of oil.
Technically, these are the perfect snack thatyou can have with you on the go.
